Ingredient
fresh kadi patta/curry leaves with stems

Method
1. Buy fresh and green curry leaves or if you have a plant at home break stems that have mature curry leaves as they have the most flavor and will also keep good for a longer time.
2. Wash the curry leaves along with the stems, shake off the excess water then pat dry with a cloth and keep either in the shade or under a fan until the water dries up.
3. Separate the leaves from the stems, discarding the discolored and not so good ones, and microwave them for 30 seconds. Stir the leaves and microwave for another 30 seconds. Repeat this process until the leaves turn dry & crisp.
4. Store in a Ziploc bag/airtight box and use as needed. These will stay good for several months if kept away from moisture. No need to keep in the refrigerator.
