Ingredients you'll need:
6 egg yolks
2 cups (316g) kosher salt
1 cup (220g) granulated sugar
aromatics, spices, dried mushrooms of your choice
the aromatics I used:
1 tablespoon (4g) coriander seeds
1 tablespoons (4g) pink peppercorns
1 teaspoon (2g) sichuan peppercorns
1 teaspoon (2g) black peppercorns
4 bay leaves
1/3 cup (9g) dried chanterelle mushrooms
